Tuna sandwich with mozzarella
Ingredients:
. 2 Cans of Compass tuna chunks in brine
. 2 Tbsp of mayonnaise
. 1 stalk green onion, finely chopped
. 1/2 red onion, finely chopped
. 1 Tbsp capers
. 1/3 of the juice in a lemon
. 4 slices of bread
. Chopped mozzarella or yellow cheese
. 1 chopped tomato
Method of preparation:
1. In one big bowl, mix the tuna fish, mayonnaise, the green and the red onions, the capers, and the lemon juice. Season with salt and pepper;
2. Sprinkle the slices of bread with olive oil on both sides;
3. Put a piece of mozzarella or yellow cheese on top of each slice of bread, and put in the oven on Broil until the cheese melts;
4. Take it out of the oven, put of few spoons of the mixture on 2 of the slices, place some slices of tomatoes, and put the other 2 slices on top.
