Salad with mackerel, spinach and fresh potatoes

Products:

2 cans of Compass mackerel fillet in brine
A handful of fresh potatoes
6 quail eggs (or 3 chicken eggs)
2 handfuls+ fresh spinach, washed and cleaned
½ bulb of red onion, chopped
3-4 tablespoons dried tomatoes in olive oil, cut
The juice of ½ lemon
3-4 tablespoons olive oil
Salt and pepper to taste

Method of preparation:

1. Put the potatoes in boiling water and cook for 15 minutes. Drain and fry in a pan with some olive oil, salt, and pepper. Leave aside;
2. Meanwhile boil the quail eggs in hot water (5 minutes). Drain and cool under running cold water;
3. In a large bowl, put the spinach, the onion, the dried tomatoes, the potatoes, the eggs sliced in halves and the mackerel, chopped into pieces. Season with lemon, olive oil, salt, and pepper.

Serve immediately.

In a large bowl add the tuna, the green salad, the arugula, the carrot, the radish, the green onion (optional) and a little sesame. Stir.
