Pancakes with spinach and tuna
Ingredients (for 5 pancakes medium sized):
1. 2 eggs
2. 240ml milk
3. 130g flour
4. 1 tbsp olive oil
5. Butter for baking the pancakes
For the filling:
1. 2 cans of Compass tuna fish in brine
2. 200g baby spinach
3. 2 garlic cloves
4. 200g cottage cheese
5. Salt and pepper
For the salad:
1. Handful of cherry tomatoes, sliced in half
2. Corn from a can
3. Cucumber, sliced
4. Parsley
5. Salt and pepper
6. Olive oil
Method of preparation:
1. In a deep frying pan, heat a little olive oil and stew the spinach with the garlic until soft. Set aside to cool;
2. Meanwhile, prepare the pancake mixture by beating all the ingredients in a deep bowl with a blender;
3. Bake the pancakes in a greased pan;
4. In a bowl, mix the spinach, cheese and tuna, season with salt and pepper;
5. Wrap the pancakes with the filling and serve with a few spoons of the salad for garnish.
