Crunchy bruschetta with avocado and mackerel
Ingredients:
2 tins of Mackerel fillet in oil
1 baguette
2 ripe avocados
1 small red onion
1 garlic clove
1 tomato
1 tbsp of olive oil
1/3 tsp of chili pepper /or chili sauce/
1/3 tsp of dried basil
The juice of ½ lemon
Salt and pepper
Method of preparation:
1. Slice the baguette into thin slices and put in a baking tin covered with baking paper. Sprinkle with olive oil, salt and pepper, and bake in the oven, heated to 180°С in advance.
2. Drain the mackerel from the oil. Finely cut the red onion, garlic and tomato, and mix well in a deep bowl, together with the mashed avocado. Add lemon juice, olive oil (or the oil from the tin), salt, pepper and basil, to taste.
3. Arrange the toasts of the baguette on a large platter and spread a tbsp of the avocado mixture. Put the pieces of mackerel on top of each toast, and serve immediately.
