Salad with cous-cous and tuna
Products:
1-2 cans Compass tuna in brine or sunflower oil
150 g Arabic cous-cous
2 large red peppers, finely chopped
1 bulb of onion, finely chopped
1 cucumber, finely chopped
A handful of parsley, finely chopped
The juice of 1/2 lemon or lime
1 teaspoon coriander powder
Salt and pepper to taste
Olive oil
Method of preparation:
1. Place the couscous in a large bowl and pour hot water over. Follow the instructions on the pack about water quantity in relation to cous-cous amount. Cover the bowl with a plate or lid and leave for 5 minutes or until the couscous swells and softens;
2. Remove the lid and mix;
3. Add peppers, onion, cucumbers, parsley, and lemon and stir. Add pieces of tuna, season with olive oil, salt, and pepper, and stir;
